Ingredients:
- 2 bell peppers
- 1 cup of ground beef, turkey or chicken flavored with taco seasoning
- 1 can of black beans
- Olive oil
- 1 can of corn
- ½ cup of shredded mexican blend cheese
- Salt and pepper
- Optional: 1/2 cup diced tomatoes, 1 cup shredded lettuce, and 2 tbsp salsa for garnishing
Utensils:
- Sheet pan
- Measuring tools
- A pan
- Oven mitts
- Spoon
- A Strainer
- A can opener
Preparation:
- Preheat the oven to 350℉
- Cut the bell peppers in half and remove the seeds
- Place the bell peppers on a baking sheet and lightly drizzle with olive oil, salt, and pepper and place in the oven to bake for about 10 minutes
- Using a strainer drain the liquid from the black beans and corn
- Heat a pan on medium/low heat on the stove and add in your meat, black beans, and corn and stir until heated through
- Remove the bell peppers from the oven and evenly divide the meat, corn, and bean mixture between the peppers and then top with cheese
- Place back in the oven for 15 minutes
- After 15 minutes use the oven mitts to remove the peppers and add additional toppings
