Ingredients:

  • 2 eggs
  • ½ cup milk
  • ½ tbsp vanilla
  • 2 tsp cinnamon
  • 6 slices of bread
  • ¼ cup quartered strawberries
  • ¼ cup blueberries
  • ¼ cup halved raspberries
  • ¼ cup halved black berries
  • Filling:
  • 1 cup plain greek yogurt
  • ⅛ cup maple syrup
  • You can substitute also use vanilla greek yogurt
  • 1 tsp cinnamon

Utensils:

  • Muffin pan
  • Bowl
  • Fork

Preparation:

  1. Preheat oven to 350˚F (180˚C).
  2. Combine eggs, milk, vanilla, and cinnamon in a large bowl.
  3. Dip bread slices into egg mixture and gently press into muffin tin coated with cooking spray.
  4. Bake for 20-25 minutes or until golden brown.
  5. Prepare filling and fruit slices while cups bake by combining the plain greek yogurt, maple syrup, and cinnamon in a bowl or combining the vanilla greek yogurt with cinnamon in a bowl.
  6. Fill up the french toast cups with the filling and fruit.
  7. Serve with a drizzle of maple syrup.
