Ingredients:
- 2 eggs
- ½ cup milk
- ½ tbsp vanilla
- 2 tsp cinnamon
- 6 slices of bread
- ¼ cup quartered strawberries
- ¼ cup blueberries
- ¼ cup halved raspberries
- ¼ cup halved black berries
- Filling:
- 1 cup plain greek yogurt
- ⅛ cup maple syrup
- You can substitute also use vanilla greek yogurt
- 1 tsp cinnamon
Utensils:
- Muffin pan
- Bowl
- Fork
Preparation:
- Preheat oven to 350˚F (180˚C).
- Combine eggs, milk, vanilla, and cinnamon in a large bowl.
- Dip bread slices into egg mixture and gently press into muffin tin coated with cooking spray.
- Bake for 20-25 minutes or until golden brown.
- Prepare filling and fruit slices while cups bake by combining the plain greek yogurt, maple syrup, and cinnamon in a bowl or combining the vanilla greek yogurt with cinnamon in a bowl.
- Fill up the french toast cups with the filling and fruit.
- Serve with a drizzle of maple syrup.
