Ingredients:
- 1 cup of spinach
- 1 cup of spinach chopped
- 1 medium bell pepper (about 1 cup) chopped
- 1 cup of mushrooms chopped
- 4 eggs
- 4 egg whites or 4 tbsp of liquid egg whites
- Nonstick cooking spray
- Salt and pepper to taste
Utensils:
- Muffin pan
- A pan
- Measuring tools
- Spatula
- A bowl
- A whisk
Preparation:
- Heat a pan over medium heat and spray with nonstick cooking spray and preheat your oven to 350℉
- Add your chopped mushrooms and bell pepper to the pan and allow to cook down for about 2-3 minutes then add the spinach and cook for about a minute longer until it is slightly wilted
- Add your eggs and egg whites to a bowl and mix together
- Spray your muffin pan with non stick spray and evenly divide your cooked vegetables among six of the muffin holes
- Next evenly divide your eggs to the muffin holes
- Cook in the oven for approximately 20-25 minutes and enjoy!
