Ingredients:

  • 1 cup of spinach
  • 1 cup of spinach chopped
  • 1 medium bell pepper (about 1 cup) chopped
  • 1 cup of mushrooms chopped
  • 4 eggs
  • 4 egg whites or 4 tbsp of liquid egg whites
  • Nonstick cooking spray
  • Salt and pepper to taste

Utensils:

  • Muffin pan
  • A pan
  • Measuring tools
  • Spatula
  • A bowl
  • A whisk

Preparation:

  1. Heat a pan over medium heat and spray with nonstick cooking spray and preheat your oven to 350℉
  2. Add your chopped mushrooms and bell pepper to the pan and allow to cook down for about 2-3 minutes then add the spinach and cook for about a minute longer until it is slightly wilted
  3. Add your eggs and egg whites to a bowl and mix together
  4. Spray your muffin pan with non stick spray and evenly divide your cooked vegetables among six of the muffin holes
  5. Next evenly divide your eggs to the muffin holes
  6. Cook in the oven for approximately 20-25 minutes and enjoy!
