Ingredients:

  • 1 tbsp of olive oil
  • 1 small yellow onion diced
  • 2 cloves of minced garlic or 2 tbsp pre-minced garlic
  • 5 cups low sodium vegetable or chicken broth
  • 1 can of diced tomatoes
  • 3 tbsp of tomato paste
  • 1 zucchini diced
  • 3 large carrots peeled and diced
  • 1 cup of green beans chopped
  • 2 tsp of italian seasoning
  • 1 tsp of sea salt
  • ¼ tsp of pepper
  • ¼ tsp onion powder

Utensils:

  • One large pot with a lid
  • Measuring cup and utensils
  • A spatula
  • A cutting board
  • A knife

Preparation:

  1. Heat a large pot over medium/high heat and add the olive oil
  2. Add the yellow onion to the pot and allow it to cook down until it is translucent (about 3 minutes) the add garlic and allow it to cook for about 30 seconds
  3. Add the rest of the ingredients and make sure the liquid completely covered all the vegetables
  4. Bring the liquid to a boil, cover the pot and then reduce the heat to a simmer or medium low heat
  5. Allow to cook until the vegetables are fork tender. This should take about 45 minutes\

Pro Tip:

Make this soup your own! If you do not have zucchini try adding diced potatoes. If you love carrots add more. This recipe can be made anyway you want!
