Ingredients:
- 1 tbsp of olive oil
- 1 small yellow onion diced
- 2 cloves of minced garlic or 2 tbsp pre-minced garlic
- 5 cups low sodium vegetable or chicken broth
- 1 can of diced tomatoes
- 3 tbsp of tomato paste
- 1 zucchini diced
- 3 large carrots peeled and diced
- 1 cup of green beans chopped
- 2 tsp of italian seasoning
- 1 tsp of sea salt
- ¼ tsp of pepper
- ¼ tsp onion powder
Utensils:
- One large pot with a lid
- Measuring cup and utensils
- A spatula
- A cutting board
- A knife
Preparation:
- Heat a large pot over medium/high heat and add the olive oil
- Add the yellow onion to the pot and allow it to cook down until it is translucent (about 3 minutes) the add garlic and allow it to cook for about 30 seconds
- Add the rest of the ingredients and make sure the liquid completely covered all the vegetables
- Bring the liquid to a boil, cover the pot and then reduce the heat to a simmer or medium low heat
- Allow to cook until the vegetables are fork tender. This should take about 45 minutes\
Pro Tip:
Make this soup your own! If you do not have zucchini try adding diced potatoes. If you love carrots add more. This recipe can be made anyway you want!
